Everyone knows I love porridge for breakfast. Oats are a very good start into the day, being very nutritious and high in fiber – but there is an even better way. Zoats. What are zoats, you may ask?
Zucchini + Oats = Zoats
But don’t gross out! It may sound weird, but it’s amazing! You won’t even taste the zucchini (depending on how much you add of course) and this is the best way to get in your veggies first thing in the morning! More advantages: zucchinis are extremely low in calories and loaded in vitamins. Swap some of your oats for grated zucchini and you will do yourself a favour! (my favourite aspect: I can eat waaaaay bigger bowls of zoats than usual porridge and yet take in less calories! 😉 )
Also: Studies have found that oats can help ward off hunger—which in turn can help you slim down—and zucchini’s water and fiber content adds fuel to the fat-burning fire. So why not!
Thankfully, ‘zoats’ are also very easy to make. All you need to do is measure about two thirds of your usual amount of oats, before grating in as much zucchini as you like. From 2/3 oats and 1/3 zucchini you can work your way up to bigger amounts of zucchini, as soon as you get used to it. Nowadays I love the “slimy-ish” texture the zucchini gives my porridge and use about 3/4 zucchini and 1/4 oats (2-3 tbsp oats). Yum!
1 cup oats
1/3 grated zucchini
1/2 tsp salt
sweetener of choice (I sprinkle stevia on top) or 2 tbsp cocoa powder for chocolate zoats
1. Place the grated zucchini, oats and water in a large pan over medium heat.
2. Add a tiny pinch of salt and stir with a spoon.
3. Bring to a steady simmer for 5 to 6 minutes, stirring as often as you can to give you smooth creamy oatmeal! Stir in your sweetener or cocoa powder at the end.
4. Add your toppings – my current favourites are kiwifruit, hemp seeds, cacao nibs and peanut butter (but you will know that from Snapchat already!).
