I am a crazy salad lover. Usually I have salad several times per week – sometimes with feta, sometimes with courgette, sometimes with nuts or with fried salmon. My Problem with my salad love used to be the fact that the leaves and veggies were way to dry for me, as I didn’t like any dressing. The store-made dressings were to greasy, oil and vinegar was too sour. That’s why I used to season my salad with salt and pepper, which I didn’t like that much either. Until my mum saved me.
Well, either she saved me or she made me addicted. Last summer she did different salads for several days in a row and I couldn’t stop eating them. Why? Because of the dressing. And ever since she told me her secret recipe, my addiction has actually become quite scary. Which is why I’ll share the secret with you guys now, together with some variations so you can always whip up my favourite dressing, whatever staples you find in your cupboards!
3 tbsp oil (I use olive oil)
3 tbsp vinegar (apple or white wine vinegar)
1 tbsp lemon juice
1 tbsp mustard
1 tbsp sugar
1/2 tsp salt
I’d recommend you to use a hand blender to mix the ingredients – they will make the dressing extra creamy. A fork will of course work too.
My favourite variations of the dressing are:
orange juice instead of lemon juice
honey instead of sugar (to make a honey-mustard-dressing!)
a salad dressing mix with herbs instead of salt
one additional garlic clove (so good!)
