Happy Saturday morning! Plans for today: Homework, start studying for Tuesday’s exam, applying for an exchange semester, going for a run (8km would be good) and tidying up my apartment. What am I doing instead? Having a pancake party!
I don’t know if I should laugh or cry… but as I’m always trying to be positive, I’m laughing and enjoying my pancakes!
These are vegan and so easy that you don’t even need to go shopping in order to make them – you’ll find everything in your cupboards!
1 cup flour (I use spelt, buckwheat or gluten-free)
1 cup oats
1,5 cups water
1/2 tsp baking powder
pinch of salt
sweetener of your choice (I use stevia drops)
+ olive oil for frying
Mix everything together. Make sure the batter is almost as thick as oatmeal so your pancakes turn out nice and round! Heat the pan to 2/3 heat, give about 1/2 tbsp olive oil into the pan and then add about 1,5 tbsp batter for one pancake. Turn as soon as bubbles start to form.
Top with fruit and jam and enjoy!
