Another Christmassy recipe, in case you still need an idea for one of the upcoming festive days. There’s not much to say about this one, only that eating the waffles made me so happy! I watched some of my favourite Christmas films, ate these and drank tea… best Christmassy moment ever!
1 vegan egg (1 tbsp chia seeds + 1 tbsp ground flax seeds + 4 tbsp water)
2 cups oats
1 cup flour
2 cups oat milk
1 tsp baking powder
1/2 tsp salt
1 tbsp sugar
1 handful of raisins
gingerbread spice + cinnamon
vegan vanilla protein powder (optional)
oil for the waffle iron
Start by preparing your vegan egg: Mix the chia seeds, ground flax seeds and water and let them stand until they thicken. (Of course you can use only chia OR flax seeds as well, but this mix worked well for me). Then add all the other ingredients and stir. Brush your waffle iron with the oil and bake your waffles.
