I’m going crazy. Pancake crazy. Vegan pancake crazy. It’s like some silly game or race with myself that I keep trying to simplify my pancake recipe. One day it will consist of just one ingredient – or something like that. Anyways, let’s stop the ramble. These are the pancakes that you watched me make on Snapchat (veryberrylottie) today, and so many of you screenshot the steps and so many requested a full recipe that I decided to publish it on my blog too!
For your information: these pancakes are love at first bite. Seriously. So thank god (or me 😉 ) that they’re actually healthy too and you can have them eeeeevery single day if you want to! Healthy, vegan, and moreover super simple. My best basic pancake recipe so far, even if I say so myself.
1,5 cups spelt flour
1 tbsp vegan protein powder
1,5 tsp baking powder
0,5 cup water
3 tbsp apple sauce
0,5 tsp salt
sweetener of choice (stevia drops, honey, maple or agave syrup or even sugar)
olive oil for frying
1. In a small bowl, mix all the dry ingredients with a fork until the baking powder is evenly divided.
2. Pour in the water and apple sauce and stir until the batter is completely smooth. Let sit on the countertop for a few minutes (the batter should be THICK).
3. Fry in some olive oil on 2/3 heat (maximum will burn the pancakes!) until bubbles start to form, then turn them around. 1,5 tbsp batter make one little pancake.
4. Serve with any jam, fruit or sauce (mine is just cocoa powder, soy milk and potato flour dissolved in water) and enjoy!
