Oh-oh. Today I realized that this blog doesn’t have one single banana ice cream recipe yet. Goodness! That’s a real shame because this blog belongs to a person who’s absolutely banana ice cream crazy and basically lives off it. So much that she should look like a banana already (or a monkey? What do you turn into when you have to many bananas?). So let’s better cover that mistake by finally posting my favourite recipe in the world.
I am someone who eats at least five times a day and those meals are mosty snacks. And because I don’t want to eat sugary yogurt or buttery cookies I make sure that those snacks are healthy and that’s why I make them myself. That’s why banana ice cream is the queen of my snack plan – apart from the fact that it tastes exactly like sugary, creamy ice cream but is completely healthy and mmhhhh!
(and of course it tastes even better when it looks pretty, right?
INGREDIENTS (for one person)
2-3 bananas (peeled, cut into chunks and frozen over night)
1 cup soy or almond milk
1/2 tsp cinnamon (optional, but I love cinnamon )
Toppings: fruit, berries, coconut chips, jam, nuts
Put all ingredients into a bowl and let the bananas melt for approx. 5 minutes. Then take your hand blender and blend it all to a thick mixtures (which will be quite an arm workout, believe me!). If you own a real blender, then better use that one (it will do the magic all by itself!). As soon as you have a nice and creamy yummyinmytummy swirl of deliciousness, scrape it into a mueli bowl and top it with all the goodies you can find in your kitchen. And then enjoy it all quite soon before it melts away!
